Indian-Style Lamb Riblets
Active Time: 5 minutes
Total Time: 1 hour and 45 minutes
Ingredients
Lamb
• 4 pounds lamb riblets, trimmed of excess outer fat
Sauce
• 1½ cups plain nonfat yogurt
• 1 tablespoon grated fresh ginger root
• 1 tablespoon curry powder
• 2 teaspoons minced garlic
• 1 teaspoon ground cumin
• ½ teaspoon each salt and ground red pepper (cayenne)
Directions
Heat oven to 350°F. Have ready a large roasting pan with rack. Pour ½-inch water into pan.
Place ribs on rack in pan. Cover with foil and bake 1½ hours or until tender.
Meanwhile mix sauce in a large bowl. Add hot ribs and toss until well coated.
To grill or broil: Grill 4 to 6 inches from medium-hot (400°F) coals 8 to 10 minutes, turning a few times until browned. Broil on broiler-pan rack 4 to 6 inches from heat source, cooking as directed.
