Sweet & Spicy Chicken and Veggies

Ingredients
• ¼ cup honey
• 2 Tbsp each Dijon mustard and melted butter
• 2 Tbsp curry powder
• 2 tsp ground cumin
• ½ tsp each ground red pepper (cayenne), ground cinnamon and salt
• 4 chicken legs (about 2½ lb), skin removed
• 1½ lb small red potatoes, scrubbed and halved
• 1 lb carrots, cut in thirds, halved lengthwise if thick
• 3 medium onions, cut in wedges
Directions
Heat oven to 425°F. Line 2 rimmed baking sheets with foil. Coat foil with nonstick spray.
Mix first 8 ingredients in a small bowl. Divide chicken and vegetables evenly between baking sheets. Spoon on honey-mustard mixture; toss with hands to coat.
Bake side-by-side 20 to 25 minutes until chicken is done and vegetables are tender and slightly charred.
