BACK TO SPICE GUIDE

Sweet & Spicy Chicken and Veggies

INGREDIENTS

1/4 cup honey
2 Tbsp each Dijon mustard and melted butter
2 Tbsp curry powder
2 tsp ground cumin
1/2 tsp each ground red pepper (cayenne), ground cinnamon and salt
4 chicken legs (about 21/2 lb), skin removed
1 1/2 lb small red potatoes, scrubbed and halved
1 lb carrots, cut in thirds, halved lengthwise if thick
3 medium onions, cut in wedges


PREPARATION

1. Heat oven to 425°F. Line 2 rimmed baking sheets with foil. Coat foil with nonstick spray.

2. Mix first 8 ingredients in a small bowl. Divide chicken and vegetables evenly between baking sheets. Spoon on honey-mustard mixture; toss with hands to coat.

3. Bake side-by-side 20 to 25 minutes until chicken is done and vegetables are tender and slightly charred.
